  • 1 cup tapioca flour
  • 1/4 cup coconut flour
  • 2 cups coconut sugar
  • 1 1/2 cups raw cacao powder
  • 2 tsp baking soda
  • 1 tsp espresso powder
  • 1 tsp salt
  • 4 large eggs
  • 1 1/2 cup full-fat coconut milk
  • 1 cup water
  • 1/2 cup coconut oil
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1 recipe Vegan Chocolate Buttercream Frosting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease three 8-inch cake pans and line the bottoms with parchment paper. Set aside.
  2. In a large mixing bowl, whisk together all dry ingredients: almond flour, tapioca flour, coconut flour, coconut sugar, cacao powder, baking soda, espresso powder, and salt.
  3. In a separate medium bowl, whisk together all wet ingredients: eggs, coconut milk, water, coconut oil, apple cider vinegar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and whisk for 1–2 minutes until a smooth batter forms.
  5. Divide the batter evenly among the three prepared cake pans.
  6. Bake for 28–30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool completely in the pans before removing them.
  8. Assemble the cake by spreading the vegan chocolate buttercream frosting between the layers and over the outside of the cake.

Notes

  • Make sure all ingredients are at room temperature for best results.
  • Greasing the pans with ghee or palm shortening helps avoid a strong coconut flavor.
  • The cake can be made ahead and stored unfrosted in the fridge for up to 2 days.
