Bacon Cheddar Gnocchi Soup Recipe: Creamy Comfort in Every Spoon

Ingredients
8-10 slices bacon, cooked and chopped
1 tbsp butter or olive oil
1 large onion, diced
2 large carrots, peeled and sliced
4 cups chicken broth
1-2 tsp salt
1 tsp black pepper
1 tsp garlic powder (or 4 cloves minced garlic)
¼ tsp dried thyme
½-1 tsp red chili flakes
16 oz gnocchi
2 cups heavy cream or half-and-half
2 cups cheddar cheese, medium or sharp, shredded
Instructions
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside on a paper towel-lined plate. Discard most of the bacon grease, leaving about 1 tablespoon in the pot.
Add the butter or olive oil to the pot. Stir in the diced onions and sliced carrots. Cook for 5-7 minutes until the vegetables become soft.
Pour in the chicken broth and bring it to a simmer. Add salt, black pepper, garlic powder, dried thyme, and red chili flakes. Stir well to combine the flavors.
Add the gnocchi to the pot and let it cook according to package instructions (usually about 2 minutes).
Lower the heat to medium-low and slowly add the heavy cream. Stir in the shredded cheddar cheese gradually to avoid clumping.
Mix in the crispy bacon pieces, reserving some for garnish. Ladle the soup into bowls and top with extra cheese and bacon if desired.
Notes
You can substitute turkey bacon or pancetta for a different flavor profile.
For a lighter version, use half-and-half instead of heavy cream.
Adjust chili flakes to your spice preference.
Fresh herbs like parsley or chives make a great garnish.
