1 cup maple syrup
1 cup granulated sugar
1 cup light corn syrup
½ cup unsalted butter
1 teaspoon baking soda
1 teaspoon pure vanilla extract
2 cups roasted peanuts (or pecans/almonds)
Instructions
In a large saucepan, combine maple syrup, granulated sugar, and corn syrup. Stir over medium heat until the sugar dissolves.
Allow the mixture to boil without stirring until it reaches 300°F (hard crack stage).
Remove from heat and quickly stir in the butter, baking soda, and vanilla. The mixture will bubble up.
Stir in the roasted nuts until fully coated.
Pour the mixture into a greased or parchment-lined baking dish and spread evenly.
Let cool at room temperature for at least 1 hour.
Cut into pieces and enjoy.
