Soft and fluffy cinnamon rolls made with protein-rich cottage cheese, naturally sweetened, and topped with a light glaze — perfect for a healthier breakfast or dessert option.

Ingredients

  • 1 1/4 cup cottage cheese (whole milk, high-quality)
  • 1 teaspoon vanilla extract
  • 2 Tablespoons maple syrup
  • 1 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 Tablespoon coconut oil (melted) or butter
  • 1/4 cup brown sugar
  • 2-3 teaspoons ground cinnamon
  • 3 Tablespoons powdered sugar
  • 2 Tablespoons blended cottage cheese mixture (reserved from above)

Instructions

  1. Blend the cottage cheese, vanilla extract, and maple syrup until smooth.
  2. Reserve 2 tablespoons of the blended mixture for the glaze and refrigerate.
  3. Preheat the oven to 350°F (175°C) and grease a round 8-inch cake pan.
  4. In a mixing bowl, combine the flour, baking powder, and the remaining cottage cheese mixture just until a dough forms.
  5. Form the dough into a ball and roll it out on a lightly floured surface into a 1/4-inch thick rectangle (about 9×13 inches).
  6. Brush the dough with melted coconut oil or butter.
  7. Sprinkle evenly with brown sugar and cinnamon.
  8. Roll the dough tightly from one end to the other to form a log, then slice into 10 equal rolls.
  9. Place the rolls into the prepared pan.
  10. Bake for 20 minutes or until the edges are lightly golden.
  11. Allow to cool for 5 minutes.
  12. Whisk together the glaze ingredients and drizzle over the rolls before serving.

  • It’s okay if the cottage cheese isn’t perfectly blended—just do your best!
  • A small cup blender works best for creating a smooth mixture.
  • You can substitute whole milk Greek yogurt for cottage cheese if desired.
