Ingredients
1 1/4 cup cottage cheese (whole milk, high-quality)
1 teaspoon vanilla extract
2 Tablespoons maple syrup
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 Tablespoon coconut oil (melted) or butter
1/4 cup brown sugar
2-3 teaspoons ground cinnamon
3 Tablespoons powdered sugar
2 Tablespoons blended cottage cheese mixture (reserved from above)
Instructions
Blend the cottage cheese, vanilla extract, and maple syrup until smooth.
Reserve 2 tablespoons of the blended mixture for the glaze and refrigerate.
Preheat the oven to 350°F (175°C) and grease a round 8-inch cake pan.
In a mixing bowl, combine the flour, baking powder, and the remaining cottage cheese mixture just until a dough forms.
Form the dough into a ball and roll it out on a lightly floured surface into a 1/4-inch thick rectangle (about 9×13 inches).
Brush the dough with melted coconut oil or butter.
Sprinkle evenly with brown sugar and cinnamon.
Roll the dough tightly from one end to the other to form a log, then slice into 10 equal rolls.
Place the rolls into the prepared pan.
Bake for 20 minutes or until the edges are lightly golden.
Allow to cool for 5 minutes.
Whisk together the glaze ingredients and drizzle over the rolls before serving.
Notes
It’s okay if the cottage cheese isn’t perfectly blended—just do your best!
A small cup blender works best for creating a smooth mixture.
You can substitute whole milk Greek yogurt for cottage cheese if desired.
