2 tablespoons maple syrup
1 teaspoon vanilla extract
1 cup almond flour
¼ cup vanilla protein powder
1 tablespoon peanut butter
½ cup chocolate chips
Instructions
In a blender or food processor, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth.
Add the almond flour and protein powder to the mixture and blend again until well combined.
Fold in the peanut butter and chocolate chips with a spatula.
Chill the dough in the refrigerator for at least 30 minutes to firm up.
Scoop the dough onto a baking sheet lined with parchment paper.
Bake at 350°F (175°C) for 10–12 minutes, or until edges are slightly golden.
