These Cottage Cheese Egg Bites are a healthy, protein-packed, and gluten-free option perfect for breakfast, snacks, or even toddler meals. Light, fluffy, and loaded with veggies, they are easy to make and great for meal prep.

Ingredients

  • 8 large eggs
  • 1/2 cup low-fat cottage cheese (drained)
  • 1/2 teaspoon salt
  • 1/2 cup chopped spinach
  • 1/2 cup chopped red bell peppers
  • 2 tablespoons salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Add the eggs, cottage cheese, and salt to the blender and blend until smooth.
  3. Fold in the chopped spinach, bell peppers, and salsa.

  5. Pour the egg mixture evenly into the muffin pan.
