1 cup Greek yogurt
1/2 cup creamy peanut butter
2–3 tablespoons honey or maple syrup (to taste)
1 teaspoon vanilla extract
1/4 cup mini chocolate chips
Instructions
Prepare your freezer by clearing space for a baking tray or silicone mold.
In a large bowl, mix the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until smooth and creamy.
Gently fold in the mini chocolate chips until evenly distributed.
Line a baking tray with parchment paper or prepare a silicone mold.
Use a spoon or cookie scoop to portion out tablespoon-sized bites onto the tray or into the mold.
Place the tray or mold in the freezer for at least 2 hours, or until the bites are firm.
Once set, remove from tray or mold and enjoy. Store remaining bites in an airtight container in the freezer.
Notes
Adjust sweetness by using more or less honey or syrup based on your preference.
Use natural peanut butter for a cleaner ingredient list.
You can substitute almond butter or sunflower seed butter for peanut allergies.
Silicone molds make for easier release, but parchment paper works well too.
Let sit at room temperature for 2–3 minutes before eating for a softer texture.
