Lemon Lush is a refreshing layered dessert with a buttery crust, creamy cheesecake filling, tangy lemon pudding, and fluffy whipped topping—perfect for any summer gathering.

  • 1 cup butter, softened
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 3 ½ cups milk
  • 2 (3.4 ounce) packages instant lemon pudding mix
  • 1 (12 ounce) container frozen whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, use a pastry cutter to combine flour and butter until the mixture becomes crumbly. Press into the bottom of a 9×13-inch baking dish.
  3. Bake for about 25 minutes or until lightly golden. Remove from the oven and allow to cool completely, about 15 minutes.
  4. In a medium bowl, beat cream cheese and sugar together until smooth and well blended. Spread evenly over the cooled crust.
  5. In another bowl, whisk together milk and lemon pudding mix for 3 to 5 minutes. Spread this mixture over the cream cheese layer.
  6. Chill in the refrigerator until the pudding layer is set. Then top with the thawed whipped topping.
  7. Refrigerate until ready to serve.

  • You can garnish the top with lemon zest for extra flavor.
  • Ensure the crust is fully cooled before adding the cream cheese layer to prevent melting.
