Ingredients

  • 2 packages (8 ounces each) cream cheese, softened
  • 1/4 cup sugar
  • 1/4 cup 2% milk
  • 1 large egg, room temperature
  • 3 cups sugar
  • 1 can (15 ounces) solid-pack pumpkin
  • 4 large eggs, room temperature
  • 1 cup canola oil
  • 1 cup water
  • 4 cups all-purpose flour
  • 4 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup chopped walnuts
  • 1 cup raisins
  • 1/2 cup chopped dates
  • 1 cup confectioners’ sugar (optional, for topping)
  • 1/4 teaspoon vanilla extract (optional, for topping)
  • 2 to 3 tablespoons 2% milk (optional, for topping)
  • Additional chopped walnuts (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8×4-inch loaf pans. Line the bottoms with parchment paper and grease the paper.
  2. In a small bowl, beat cream cheese, sugar, milk, and egg until smooth; set aside.
  3. In a large bowl, beat sugar, pumpkin, eggs, oil, and water until well blended.
  4. In another bowl, whisk together flour, pumpkin pie spice, baking soda, cinnamon, salt, baking powder, nutmeg, and cloves. Gradually beat into the pumpkin mixture until combined.
  5. Stir in walnuts, raisins, and dates.
  6. Pour half of the batter into prepared pans, dividing evenly. Spoon cream cheese filling over batter to within 1/2 inch of sides. Cut through filling with a knife to swirl.
  7. Cover filling with remaining batter and cut through again to swirl.
  8. Bake 65–70 minutes or until a toothpick inserted into bread (not filling) comes out clean.
  9. Cool 10 minutes before removing from pans to wire racks; cool completely.
  10. If desired, mix confectioners’ sugar, vanilla, and milk to create a glaze. Drizzle over cooled bread and sprinkle with walnuts.
  11. Slice and serve. Refrigerate leftovers.

Notes

  • Ensure cream cheese is softened for a smooth filling.
  • Use parchment paper to make removing loaves easier.
  • The bread freezes well; wrap tightly and store for up to 3 months.
  • Optional glaze adds extra sweetness and presentation appeal.
