Sausage egg and cheese breakfast roll-ups served for family breakfast

These Sausage Egg and Cheese Breakfast Roll-Ups are a quick, hearty breakfast made with crescent roll dough, scrambled eggs, sausage, and cheddar cheese. Perfect for busy mornings or a savory brunch.

Ingredients

Scale
  • 4 large eggs
  • 2 tablespoons milk
  • 8 oz refrigerated crescent rolls
  • 8 sausage links
  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium skillet, cook the sausages until fully cooked in the center.
  3. In a small bowl, beat the eggs with the milk. Reserve 2 tablespoons of the beaten eggs in a small dish for brushing the crescents later.
  4. Scramble the remaining eggs in a skillet until cooked through.
  5. Unroll the crescent dough and separate into 8 triangles.
  6. Place one sausage link on the wider end of each triangle. Top with about 1 tablespoon of scrambled eggs and a generous pinch of shredded cheese.
  7. Loosely roll up the triangles from the wider end, keeping the filling inside using your fingers.
  8. Place the roll-ups on an ungreased cookie sheet.
  9. Brush the tops of the roll-ups with the reserved beaten egg.
  10. Bake for 16 to 18 minutes, or until golden brown.

Notes

  • You can substitute turkey or vegetarian sausages if desired.
  • Try adding chopped chives or bell peppers for extra flavor.
  • These are great for meal prep—reheat in a toaster oven for best texture.
