Ingredients
Scale
4 large eggs
2 tablespoons milk
8 oz refrigerated crescent rolls
8 sausage links
½ cup shredded cheddar cheese
Instructions
Preheat the oven to 350°F (175°C).
In a medium skillet, cook the sausages until fully cooked in the center.
In a small bowl, beat the eggs with the milk. Reserve 2 tablespoons of the beaten eggs in a small dish for brushing the crescents later.
Scramble the remaining eggs in a skillet until cooked through.
Unroll the crescent dough and separate into 8 triangles.
Place one sausage link on the wider end of each triangle. Top with about 1 tablespoon of scrambled eggs and a generous pinch of shredded cheese.
Loosely roll up the triangles from the wider end, keeping the filling inside using your fingers.
Place the roll-ups on an ungreased cookie sheet.
Brush the tops of the roll-ups with the reserved beaten egg.
Bake for 16 to 18 minutes, or until golden brown.
Notes
You can substitute turkey or vegetarian sausages if desired.
Try adding chopped chives or bell peppers for extra flavor.
These are great for meal prep—reheat in a toaster oven for best texture.
