  • ½ cup chopped pecans
  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 teaspoons banana extract (optional)
  • ½ cup (1 stick) butter, melted
  • 4 ripe bananas, sliced

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a 2-quart or 9×9-inch baking dish with nonstick cooking spray.
  2. Make the streusel: In a bowl, use a fork to combine brown sugar, flour, and softened butter until crumbly. Stir in oats and pecans. Set aside.
  3. Make the filling: In a medium bowl, whisk together the flour, sugar, and milk until blended. Whisk in melted butter. Pour the batter into the prepared baking dish.
  4. Layer sliced bananas evenly over the batter.
  5. Sprinkle the streusel topping evenly over the banana layer.
  6. Bake for 45-50 minutes, or until golden brown and set.
  7. Serve warm, optionally with a scoop of vanilla ice cream and extra banana slices.
