Individual sticky toffee pudding with toffee sauce on dark plate with fork

A rich and indulgent sticky toffee pudding made with dates and warm spices, served with a luscious toffee sauce. Perfectly portioned for two, this dessert is warm, comforting, and best enjoyed with vanilla ice cream or whipped cream.

Ingredients

  • 2-1/2 ounces pitted dates
  • 1/3 cup orange juice
  • 1/4 cup butter, softened
  • 1/3 cup packed brown sugar
  • 1 large egg
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon baking soda
  • 1 teaspoon grated orange zest
  • 1/4 teaspoon vanilla extract
  • Toffee Sauce:
  • 1/4 cup butter
  • 1/2 cup packed brown sugar
  • 1/2 cup heavy whipping cream
  • Vanilla ice cream or whipped cream (for serving)

Instructions

  1. In a small bowl, combine dates and orange juice. Microwave in 30-second increments until dates are soft, 1-2 minutes. Cool slightly. Process in a food processor or with an immersion blender until mostly smooth.
  2. In a medium bowl, cream butter and brown sugar until light and fluffy. Add egg, beating well.
  3. In another bowl, combine flour, baking powder, salt, ginger, cinnamon, and baking soda. Gradually add to creamed mixture.
  4. Stir in date mixture, orange zest, and vanilla.
  5. Fill two well-greased 4-inch fluted tube pans two-thirds full. Bake at 375°F for 15–18 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes on a wire rack.
  6. Meanwhile, in a small saucepan, melt butter. Stir in brown sugar and cream. Bring to a boil over medium heat, stirring constantly. Remove from heat.
  7. Invert puddings onto dessert plates. Serve warm with toffee sauce and vanilla ice cream or whipped cream.

Notes

  • Serve immediately for best texture and warmth.
  • Can be made ahead and reheated gently before serving.
  • Pairs wonderfully with coffee or tea.
