  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • ½ cup diced strawberries
  • 4 (6-inch) tortillas
  • 2 tablespoons butter, softened
  • 1 teaspoon sugar
  • ½ teaspoon cinnamon
  • Strawberry sauce, for dipping

Instructions

  1. In a mixing bowl, beat together softened cream cheese, 2 tablespoons sugar, and vanilla extract until smooth.
  2. Fold in the diced strawberries gently until combined.
  3. Spread half of the strawberry cream cheese mixture over one tortilla.
  4. Heat 1 teaspoon of butter in a pan over medium-high heat.
  5. Place the tortilla with cream cheese in the pan, cream cheese side up.
  6. Spread 1 teaspoon of butter on another tortilla and place it on top, butter side up.
  7. Cook for 2-3 minutes on each side until crispy and golden.
  8. Mix together 1 teaspoon sugar and ½ teaspoon cinnamon and sprinkle over the quesadilla.
  9. Repeat with the remaining ingredients for the second quesadilla or cook both simultaneously using a griddle.
  10. Remove from heat, let sit for 2 minutes, slice, and serve with strawberry sauce for dipping.
