Ingredients

  • 1 cup diced vegetables: broccoli, carrots, and red bell pepper
  • 4 ounces softened cream cheese
  • 1/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 large flour tortillas (burrito size)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons sliced green onions

Instructions

  1. Prepare the vegetables by dicing them finely. Allow the cream cheese to soften at room temperature.
  2. In a medium bowl, combine softened cream cheese, mayonnaise, garlic powder, dill, salt, and black pepper. Mix until smooth.
  3. Warm the tortillas in the microwave for 15–20 seconds. Spread the cream cheese mixture evenly over each tortilla.
  4. Sprinkle the diced vegetables, shredded cheese, and sliced green onions evenly over the cream cheese layer.
  5. Roll each tortilla tightly from one end to the other. Secure with toothpicks if necessary.
  6. Chill the rolled tortillas in the freezer for 20 minutes or in the fridge overnight to set.
  7. Remove toothpicks and slice the rolls into pinwheels. Arrange on a platter and serve.
