These no-bake Pumpkin Protein Balls are a quick and healthy snack made with oats, almond butter, pumpkin puree, and protein powder. Perfect for meal prep, they are packed with fall flavors and ready in just minutes.

Ingredients

  • 1 cup rolled oats (gluten free if desired)
  • 2 scoops vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • ½ cup almond butter
  • â…“ cup pumpkin puree
  • ¼ cup raw honey (or maple syrup for vegan)

Instructions

  1. Combine all ingredients in a large mixing bowl: oats, protein powder, pumpkin pie spice, almond butter, pumpkin puree, and honey.
  2. Stir until the mixture is well combined and forms a sticky dough.
  3. Using a small cookie scoop, scoop out portions of the dough and roll into approximately 22–24 small balls with your hands.
  4. Place the balls on a plate or tray and freeze for about 10 minutes to firm up.
